Upgrading Drupal

I created a CCK node for public users to submit, but don't want them to see the menu settings, publish options, etc. I also want to have default values filled into the form based on their user profile.

I found many articles on how to modify the form for users to submit custom CCK nodes, but since the architecture has changed for 6.x, I can't find anything. I see functions in the api which I can go put switch statements in, but that is a complete hack. I'd have to switch the form_set_value call to see if it is from my form and if it is a certain form value...

I had upgraded from 5.7 to 5.8 and now to 5.9. In between the upgrade from 5.7 to 5.8, somehow newly created content is not available to guests or authenticated users. Only the admin can see the content. I did a search on the forums and was not able to find any answers. Has anyone else had similar issues?

The 5.9 to 6.3 upgrade just hangs for hours on update 6021, just a continuous barber pole on the update page. If I break out of the update and try it again, it just does the same thing, hangs and gives this error.

My web hosting has a 1-click installation to make everything easy for those starting out.

Unfortunately the version they gave me is 5.3, which I'm guessing is a bit old.

But I see 5.8 and 6.3... So which do I need?

And what is the easiest way to upgrade with out having to completely reinstall the thing.
After all, the big install thing was what I was trying to avoid.

Please use layman's terms, I'm new to a lot of this.

Well my site is now dead after various attempts to upgrade and restore and run backups and everything else I can think of.
