Drupal 8.x

I have a question, regarding uploaded files. I've looked, and I find the "File System" area under the "Configuration" tab, but that setting appears to be an "all or none" kind of thing. My question is, is there a way to control where particular files go? For example, on a site I'm working on, I have videos, podcasts, photos, among other file types. By default, it appears that EVERYTHING ends up in the /SITES/DEFAULT/FILES folder. I was hoping to organize things a bit, basically having /SITES/DEFAULT/FILES/VIDEOS and /SITES/DEFAULT/FILES/PODCASTS, etc.

I've followed the instuctions here:

to enable ftp.

However, when I go to install a theme I get message, "Failed to connect to the server. The server reports to the following message: Cannot connect to the ftp server check settings...."

Any help appreciated.

I have a content type called reviews and want to display field content of {{ content.field_rating }} in node--reviews.html.twig.
