Drupal 7.x

I am getting a total site failure -- i.e., WSOD on every page; Drush won't even connect to the site to clear cache (although it says it can connect to the database, and that the problem is a site configuration error). The error it gives me in drush and error reporting turned on is variations on this:

Unsupported operand types in /drupal-7.2-folder/modules/field/field.info.inc, line 259

I will be building an intermediate commerce site, about 120 products w/shipping & cc.
I will be using drupal 7 only.
I'm confused on which path to follow, ubercart seems D7 ready, I guess, and drupal commerce is an offshoot project, I guess, but have heard rumours it is not ready for prime time.

I appreciate input - I don't want to build twice - which should I use going forward?

Can a core theme look at another "override" stylesheet? This way I could take advantage of any new updates to the core themes, yet have my own style overrides. Or do I have to copy the whole theme over sites/all/themes?

I want to change my password storage encryption to something with which I can work with (Flash as3 doesn't support sha512 http://code.google.com/p/as3crypto/). But this seems to be very hard to find out. I couldn't find any usefull documentation on this subject. Can anybody help me with this?

I extended the profile page using the Profile2 module to include dropdown lists for things like Gender, Race,etc.

I now need to access the key -> value pair in the above mentioned fields to use in a chart I am generating. How do I accomplish this? What functions do I need to use? Sample code would be appreciated.

From my research thus far, it seems that this information is stored in a BLOB (binary) field in the field_config_instance table? but can't be sure since the field is not human readable.

I'm new to Drupal.
