I just tried version 6.x-2.1 of this module, on a site running Views 6.x-2.1, Drupal Core 6.10

and i got this error message:

Fatal error: Call to undefined method views_plugin_style_watchdog_table::render_fields() in /home/xxx333/public_html/devel/sites/all/modules/views_watchdog/views/theme/theme.inc on line 40

is this because this site is on an old version of Views? or is something else amiss?

Yes, too old version of Views. You need at least Views 6.x-2.7 or newer.
