The Case Studies leave a little to be desired - so, what kinds of things seem important to gather about this?

I can imagine that we'd want to know the following information.

Hardware information:
Server list
Server specs
Network specs

Software Information:
Is cache turned on
Information about the OS/Software (e.g. php accelerator)

Usage Statistics:
hits/week broken down by anonymous vs. logged in
comments/week
comments/minute in peak minute
nodes/week
users logged in/week

CPU/DiskIO/RAM usage during the week

Is there anything else? Once we get a decent list we can get the data from the infrastructure team and write up a Case Study.
