I want to recreate a similar module on Drupal 7 to this one (built on Drupal 8). Is anyone aware of a similar module for Drupal 7?

Ok, I've looked at it again, but there is no module there. It's just a form.

But I think I'm realizing that you are asking how to create a form like that in Drupal 7. Is that correct?

as far as I can tell what you are linking to is a multi-step form.
