Override is hard to find and use: Give back the old way of overriding all the fields

Dereine was explaining to me how this works now, and expressed that it would be good to also have the ability to override when just clicking on fields, rather than just overriding field-by-field. I'll let him add to his concept of how overriding can be improved.
