How can I best add columns to the default project and task list ?

Storm exposes all fields to the views module. You should create a page view to replicate that page and set the path to storm/projects or storm/tasks to override the default one.

If you cannot fully recreate the page, please create an issue. Note also that in the future Storm will be using views more, so this is the 'future proofed' solution.
