I'm not quite sure but I believe all invoices automatically have the admin Storm Organization at the top, but say I work in a freelance co-op, is there a way to add say my address or phone number when I send someone an invoice?

The way that the invoices are themed can be overwritten - by see the functions in storminvoice.theme.inc.

Alternatively, you could use views to build up a custom looking invoice.
