Great little module here, which does exactly what I need it to do. Would be nice if it could somehow integrate with profile taxonomy. I tried to get it working, but it just threw up an error. If I had 4 choices, it showed 4 empty checkboxes as well as a 5th checkbox saying "select one of the following". Any workaround for this?

This is certainly possible, but I would suggest you submit a request to the Profile Taxonomy project to add a checkboxes/radio buttons option. This seems more efficient to me. If you can reassign this issue to the project accordingly.

Another option: how difficult would it be to add multiple select lists to this? I was thinking that, for vocabularies with a lot of terms, (such as having people fill in a list of languages they speak), a multiple select list would probably work better than a checkbox. Just a thought. I will also submit this request to the profile taxonomy people.

List selections (i.e. multiple selects) are already supported by the core profile module albeit for a regular list of options. I actually dislike multiple selects (they're cumbersome to use), which is why this module was created in the first place.

Again, the most appropriate place for your feature request is with Profile Taxonomy.

Profile taxonomy version 1.0-rc2 is now compatible with profile checkboxes and they can be used together.

They are quite similar now, e. g. data structure, maybe it should be considered merging them.

I believe the modules should remain separate because each fulfills a particular niche. Admins desiring profile checkboxes/radio buttons might not need/want profile taxonomy and vice versa.
