Swap variantSortHelper() for ConfigEntity::sort()

We can leverage ConfigEntity::sort() rather than having to have a separate variantSortHelper() on the Page entity.

On second thought, I think this should be fixed as part of #2692397: Adding/removing variants leaves Page::$variants out of date.
