i was hoping that MimeMail (along with the Send module) would allow me to send content to users as attachments so that they could use the source files to post on their sites. In other words, rather than MIME-encode the HTML source of the node inline to the email message I really need the ability to instead attach the generated HTML source as an HTML file (along with any associated images).

Is there an easy way to accommodate this third option?

To clarify, an admin would click on the "Send to friend" link generated by the Send module and the end result would be that the recipient would receive an email with the node content as attachments, i.e., the html source file, any images embedded in the node, etc. INSTEAD OF the node being mime-encoded HTML within the message body (which prevents the recipient from viewing the html source -- not what we want).

Any insight would be greatly appreciated.

I'm not sure this is in the scope of what this module is attempting to do. If you've got a good use case and a good patch, it might be worth a discussion.
