Is there a way to simplify organizing meetings with other site users, like: what date would fit best for a small group of attendees? volunteer_timeslots comes close but is not quite what I'm looking for.

Maybe you can work with the volunteer_timeslots maintainer to make the module more what you like. This hasn't place in this module.
