So I believe the standard way would be to copy field.tpl.php to your theme folder, change the name according to http://drupal.org/node/1089656 modify the php to include the extra diva and use this template as an override. Is there a way to do this with DS? It seems easy enough to create new divs, classes, wraping divs, but how would you create a div INSIDE the field div. I see there is also custom field templates, and there is mention of 'template suggestions' and creating a '.tpl file' like field--reset.tpl.php under extras but I don't see any information on where these files go, where to get default code examples, or if this even is the right way to do what I want.

You need to add these templates to your theme. You can start by copying the field template to the field--reset.tpl.php.
