I tried and follow your tutorial to add bricks to paragraphs but this step:

Go to Structure > Paragraphs types and create Layout type.

This must be incomplete. I create a layout type but then no layouts show. What am I missing here? Do I add a field?

yes. I think I figured it out although the instructions weren't clear. I had to add the brick field(the non revision one) to paragraphs. See screenshot

I also had to turn on the "Use the administration theme when editing or creating content" or else the dropdown doesn't work. This is using Bootstrap 8.x-3.6. see screenshot
