When enabling the module the share buttons are displaying on all pages without granular control or anything to disable it. When adding a block to the page you then have 2 versions of it.

There needs to be a way similar to the blocks system to control how the share buttons are placed on the page or controlled. It seems based on the screenshot provided on https://www.drupal.org/node/2719155 you can see there is a placement section. In the config there was not a placement section.

Am I configuring this correctly? I did follow the instructions

The contributed doc you linked to was incomplete and needed updating since the 8.x-1.5 release:

  • Placement settings have moved from AddToAny settings to the Manage Display form for content types
    • i.e. Structure > Content types > Article > Manage display
