How can I "turn-off" storing webform results in the database but still retain webform functionality?

I can create custom PHP forms outside of Drupal that does what I need because...

Some of these organizations I'm working with do not want information stored in the database to help protect client personal information or to help eliminate any possible liability if there were a breach in access either by cross-site scripting, snoopy employee, etc.

Granted the argument can made that form results are sent to an email inbox somewhere and we can question that security but that's a security issue more for internal IT rather than front end web folks.

I like the ease of Webform functionality.
