I have installed the dev version of contact storage because I want to embed a contact form in a page . when i click on the entity embed icon and i choose contact form, i only get the choices : Entity Id or Label

How can I get the choice to view the entire entity?

Not right now. See #2796269-6: Contact_form cannot be embedded without rendered entity formatter for a workaround.

I don't think we should necessarily aim to support config entities.

Also, this is being solved in #2818075: [upstream] Entities with no custom viewmodes cannot be embedded as "Rendered entity".
