I am now trying to customize panels's 'add content to' modal-up, where you can select and configure a pane to display in a region of the panels. What I want is customize the pane categories, say, to remove a certain category as it is not user friendly. I believe there must be some hooks to do this. Some Drupal panels master have any ideas about this?
