I've tried looking through the documentation included with the module and googled the heck out of this topic and I still can't find the answer.

I want to either change what is displayed in the content of the e-commerce product page to a custom block or delete the product page entirely and create my own Products page.

Any ideas?

GOT IT!!! :D

Change the url alias of the page you've created to "product" (same as the page generated by the e-commerce module) and it becomes the "product" page.
