Drupal is up and running but how do I ...?

Taxonomy and access control

After having played around for a while I finally think I've understood how taxonomy works, and it looks very nice.

Advice on how to set up a site??

I'm considering to redesign my personal web site using Drupal but being new to Drupal I'm not sure what is the best way to do it. So I would appriciate advice/suggestions for how I can do this in Drupal.

I've been playing with Drupal and set up several experimental sites so I got no problem with the really basic stuff but there are a couple of things I would like to have some advice/suggestions on.

I currently have a number of photo pages that I would like to keep "as is", I haven't got the time to redo them in Drupal. Can I just drop these folders into a Drupal site without problems or is there something I should think about?

For the new site I would like to be able to have photos embedded in my stories but the visitors should be able to get a larger version by clicking on them, either as a new window (with only the photo and possible a caption) or something similar to what can be seen on this site: http://www.cabel.name/ I could do this on a hand-coded site but what would the best way to do this in Drupal?

For some pages I would like to have a very "clean" look, basically only the content of the page and nothing more (nothing of the "normal" things you find on a drupal site). The design would remind visitors of the "regular" pages but be distinct from them, the intention is to use these for longer stories with pictures etc, I imagine them to open as new windows when the users click on the links to them.

Remove read more link from Taxonomy-Block

I have found that taxonomy-block could help me make dynamic menues. If I set teaser to "0" it will give me just the title. However for this to be a really good menu I woul like to get rid of the read-more link. I've tried going through the code, but I'm not that good at it that I can find out how to exclude just that bit. Anyone done it?

How do I categorize Content

I just want to make sure I am setting things up correctly. I need to categorize some content for a website. For example, if you had a category named "Restaurant Reviews" and then had sub categories of Mexican, Italian, American, etc with reviews under each category, how should that be categorized? I currently am using a Vocabulary for the top level category and terms for each sub category, but the fact that I have to use a php snippet to display the things under a specific vocabulary make me wonder if I am doing this correctly.
