I have a webform for anonymous users to fill in if they want to subscribe to a weekly event.

That form is cleared weekly.

I want to keep their contact details, probably in another webform? If they did not fill the form before.

How can I copy the details from one webform to anotherm without the users knowing it?

If you want a fresh Webform every week, it might make more sense to clone the entire Webform each week. If you are after a database of submitters, downloading that and putting it into a separate database (or a spreadsheet) might be your best best. You can probably move submission between Webforms by changing the nid in the database for all records associated with the submission, as long as the Webforms have identical components.
