better node layout of videos + categories

A couple areas i think need work on is the node layout. On my site I have several quality versions of the same video so this adds alot of bulk to the video node page. Perhaps add the ability to add 1 video with several different quality versions. So they can see the 1 video with options of different formats and qualities.

And a built in category system. I was told once to use the taxonomy but im a dunce when it comes to drupal so I wasnt sure how to do this. Maybe a guide on this if you dont plan to incorporate this feature.
