When I go into "CCK Fields Settings" and make changes to settings, both to the text fields and to the category selectors, some of the resulting changes save, but most of them do not. I have several hundred cck fields and there seems to be little pattern to the changes that are saved vs the ones that are not. When I make 2 small changes, they save, when I make 30 changes, they do not - but sometimes some of the changes do save.

There are no such settings in this module, they must come from another project. You need to find out which and report it there.
