I've been search endlessly to find a way of creating a simple link such as "follow *username* on twitter" or something like that on the users profile page. But looking at the data I'm getting with the profile page the twitter link doesn't seem to be referenced there. Can anyone find a way of doing this?

You might want to check out @Anywhere. A block with a little HTML could add this functionality very easily.
