And yes apostrophe can be used in email address, weird but it happens. http://www.remote.org/jochen/mail/info/chars.html
Any ideas about how I can fix this?.. I've tried rearrange the input filters but sadly to no luck.

I can't reproduce this. Apostrophes are working fine for me.

Please try disabling other filters, and let me know precisely what html code is being generated for the address by the spamspan filter
