How we can change number of visible slides in caruselle on various window width?

For example: from 5 to 3 on the wide screen.

You may want to provide slidesToShow > 1, and when adding breakpoints, adjust slidesToShow accordingly.
Play around with Mobile first option, and the expected breakpoint width, e.g.: either 767 (min) or 768 (max).
