every folder and files created by drupal (i.e: imagecache folder) is set to 'www-data' as the owner.
with the 'quickstart' as the default username we can't delete the file/folder manually (permission denied).
and changing the permission could only be done by root access.
could it be better if the default username 'quickstart' changed to 'www-data' ?

To understand the solution, you need to understand unix file permissions. Which are complicated, and beyond what I can teach you.
Apache is user 'www-data'. These files should be owned by user www-data, and group www-data.
User 'quickstart' should be a member of group www-data and get group permissions on those files.
For security, Apache should have different (and fewer) permissions than quickstart.
You can run the command 'drush quickstart-fixperms --domain=example.dev' to do a quick fix. 'drush help quickstart-fixperms' will show you the commands that are being run. You can write your own by creating a bash script to help.
