Sometimes we provide an extra discount to some orders, or an item is out of stock. In that situation it would be nice, if one could regulate the amount to a smaller amount.

Yes, I think the request has come up before.

Übercart or Commerce? I'll happily accept patches, but I'm unlikely to spend my limited free time to develop this. Not that it should be difficult to implement another capture button that asks for the amount.
