When editing a node, it will show an empty choice if an answer was left open. (Even if no changes were made to any of the pollfield options) This behaviour does not occur when creating a node the first time.

I couldn't immediately replicate this bug. Could you provide more details?

Just to be sure, are you using the latest 6.x-1.10-beta1 release? It fixed a bug that sounds a bit similar to the problem you are having (http://drupal.org/node/610442).
