I'm interested in running MongoDB on another server and using this module but I'm having a few issues figuring out how to go about doing this. Any suggestions or documentation ?

First things first: use the latest dev version and not this very old rc2. Then read the README and declare your database accordingly.

At this point, you should be able to use some of the modules/plugins included in the MongoDB package : come back with more details if this does not work.
