My Safari 3.1.2 on OSX is detected as a mobile browser...

Of course, I updated the browsercap database to have the lastest one available.

You should make sure you're user agent is set to default.
You have to have the Develop Menu is on.
To turn on the menu go in to Prefrences>Advanced then check the show Develop Menu.

After you turn it on you can click on the Develop menu item and change your user agent.

Here the same Problem with Safari. User Agent = Default.

I noticed the same problem when browsing using the iPad today. It showed me the iPhone / mobile theme. I don't want the iPad doing that.

Are you using PHP 5.3 ? (in that case, refer to #854538: PHP 5.3 -> always mobile version)
