It is currently not possible to select form display.
The Default form display is used by default
If one needs to specify a different form mode per entity to allow different crops for images, this is currently only possible with Inline Entity Form
I like this module more as one can configure the image to be previewed on edit form
Install the module
Create one more Media form display for Image
Add an image media field to a node (or other entity)
Go to node form display and select Entity browser for image media field format
Observe that it is not possible to select the created form mode
