I found it relatively easy to add a new mime icon type - just extend the PNG files on the 16 and 32 versions, add the icons, and update the CSS with a new entry and mathematical relationship.
However, might be a good idea to add some expanded instruction to the README file for anyone else wanting to do this.

Good idea. If you write up your steps, I will add it to the files. Maybe a separate file, CUSTOMIZE.txt?

Also, if you added icons that are useful to others, you may want to consider submitting a patch (or just sending new files in a zip).
