Is there a way I can make the fields collapsible/expandable? When someone clicks on “Upload Image” or “Upload Video,” the fields will appear and when clicked upon again, the fields will hide?

You'd have to add all these fields to your form then show/hide them with JavaScript. There may be some module out that adds this functionality to CCK fields, but my guess is you'll have to take the manual approach and write it yourself.
