When I pull in feeds I can only get categories or tags that come in from the feed. I would like to assign a default vocabulary term from my existing list of terms. Am I overlooking something?

Enable FeedAPI Inherit which comes with the FeedAPI module ( under FeedAPI Add On).
Add your Feed Content Type to your vocabulary or if you using something like Content Taxonomy, add your Content Taxonomy field to your Feed Content Type.
If you now create a new feed you can select which default term your feed item should get.
