I'm looking for a way to modify the Upcoming Events list, so that is shows some sort of an indicator if the user has signed up for the event or not.

Something like: "(Event) .. (S) .. (Remaining time)"

Where S indicates that the user has signed up for the event.

Would this be possible with some sort of a code snippet?

Yes, you need to implement hook_event_edit_upcoming in your module. Maybe file a feature request for signup to do that.
