I've used the cookie audit tool on a website with this enabled, however despite stopping Google Analytics, there seems to be some core cookies still being created. How do I stop them?

This module does not stop cookies from being set. If you want to suppress any Drupal cookies, you need to hack the code.These are however session cookies, so I think you will still be compliant.
