It seems that regardless of which option I choose as the default for the To date it will always be the same as the From date.

I may be seeing a similar problem. I try different default options and my form never shows the date defaulted... tried "now" and "relative" (with +7 days) and neither worked. I am not using "to" date though so perhaps it is not related at all.

Unfortunately the Drupal 6 version of the Date module is no longer supported. That said, we appreciate that you took time to work on this issue. Should this request still be relevant for Drupal 7 please feel free to reopen it. Thank you.
