I might have overlooked it, but shouldn't there be a way to generate multiple exceptions on a specific repeating event.

e.g.: person A is working the late shift for two weeks, with the exception of say, one thursday, and a monday, somewhere.

It could work like in iCal, where you get asked if the change to that node is only to this very day, or for all the 'repetitions of that event.

This can now be done, but the interface is not 100% IMO.
If you fill in an exception, save, and then edit again, you will find a place to put anther exception.
altenatively
YOu can fill in the exception, PREVEIW, and then another field group will appear to place another exception.

Repeat as often as you wish for all your exceptions.
