View table display + date configuration - is this possible?

Hi,

I'm trying to create a lesson planner in Views which shows a week of dates with nodes added to 4 different classroom tax terms - please see the attached image. I would like to show which classrooms are booked on which days, and also show the empy rows/colums. The node title in the box could be the name of a lesson.

The thing I am struggling with is how to display all the dates within the range, even if some of them have no nodes (EG days off or unbooked yet).

For uniformity I still want these date rows shown, and also empy tax term columns - but if there are no nodes using these dates, Vews wont show them. I just want to display all dates as narrowed down by the filter: eg between now and now+7 for the following 7 days rather than all dates which have nodea attached.

The icing on the cake would be if I could add some default text to empy boxes (eg classroom free) -

I realise this probably isnt straight forward, but any pointers will be very much appreciated,
