hmmm..
when I want to add a product, so there's no field for a product description. the product content-type isn't appearing on the content-types listing. there's also no possibility to add a product to a navigation-menu.
when I'm on the product add form, I get the following errors:

There is a critical bug in Drupal 7.0-RC1, #979958: load_functions detection for menu items broken by patch #606966. Please use the development version of Drupal 7 to test Drupal Commerce.

the RC1 was released, because drupal 7 hadn't critical bugs anymore. are you sure, that the errors are disapearing, when I install the dev-version - or is your post just a assumption?

rszrama commentedIf you look at the project page's installation instructions, we are linking to this as the only core issue that had to be resolved for Drupal Commerce to run on RC1. Unfortunately this was a pretty big bug that slipped through the cracks, but with the patch the exact errors you're experiencing will disappear.
As for where to put a description, we don't have full user documentation, but you basically have to make the decision yourself. I would recommend creating a node type with a product reference field on it and using that node's body field for the product description. To see an example of this, use the Commerce Dev installation profile that is currently hosted at http://github.com/rszrama/commercedev.
