We decided to use the same profile type for both billing and shipping profiles, for cleaner code and better UX (allows you to reuse addresses for both). So let's rename the "billing" profile to "customer".

We also need to start using entity_reference_revisions to reference an exact revision of a profile, protecting us against changes.
