Is it possible to print the line item label in the email that gets sent out to clients, instead of the line item ID? The ID is jut a number and thus not descriptive enough to be of benefit.

Yeah, not sure. There's a [line-item-label] token being defined in the code. You just can't use the line item entity as a token directly. But line item tokens in general are a little odd... there are open feature requests for providing something better than what other modules are generating: #1742748: Consider default Token formats for use in e-mails
