Hi,
We can set the folder to use for barcode image via admin/config/media/barcode
But only use fix (one) folder/path.
How to use token for this, Example:
sites/default/files/barcodes/[current-date:custom:Y]/[current-date:custom:m]/[current-date:custom:d]

This module is no longer supported and there will be no new development on the Drupal 8 branch. I suggest you try using the Barcodes module instead (https://www.drupal.org/project/barcodes)

Barcodes is very similar to this module, and is supported for Drupal 7, 8, and 9.
