I followed this tutorial to avoid database caching using authcache & memcache.

When I add this line :
$conf['authcache_builtin_cache_without_database'] = TRUE;

I get this error :

Call to undefined function db_query() in /....../includes/cache.inc on line 344

Can you help me ?

Ok, I can reproduce this. The reason is that the Memcache API and Integration module tries to access the cache_bootstrap in order to read its configuration. Therefore, that bin also needs to be placed into memcache (or any other third-party non-db cache). I've updated the instructions in the documentation (Authcache 2 tuning guide - avoid the database).
