Right now I can see five sidebar layouts to choose from. How would I go about creating / modifying any of those layouts?

1. You actually have 11 options if you account for the possibility of omitting any or both of the 2 sidebars. A sidebar is not displayed when it has no blocks in it. This holds for sitewide configuration as well as with per-path defined block configurations.
2. You can make custom layouts by laying blocks out on the site with skinr. Like you see on http://www.sooperthemes.com/arctica/
