I think the system is already tracking who updates each ad (thought not what updates they make). Could this information be made available under a tab on the ad?

This feature has been implemented. The bad news is that currently there's very little information being tracked -- not even a user ID. All that's currently logged is a timestamp accurate to 1 hour and an action.

Hello,

I seem to get the 'Activity' tab irrespective of the permisisons, i.e. this is showing even for anonymous users who only have the permission 'Show Advertisment'

Indeed, this is because we recycled the 'access click history' permission which is automatically granted if you do not enable the ad_user module. I have fixed this by creating a new per-user per-ad permission named 'access activity log':
