I installed UC Hotel v1.x into a barebones Drupal site and let it enable the other modules it needed. All seemed OK. Created two nodes. I then upgraded to 2.0 beta 4 and got white screens on any page where one of my nodes were showing (but admin pages still OK). Deleted the nodes I'd created; this allowed me back onto the home page. Created a new node, problem reappeared. Upgraded to 2.x-dev but problem persisted.

Revisited project page on drupal.org. It mentions the need for Date (Date_popup) to be installed. I checked the module list; Date_popup was enabled but Date was not. However, and here's the point, Drupal was not identifying that Date was a required module for any of the other installed modules. Enabled Date, which in turn required Content be enabled. Now all seems to be working.

So, looks like the dependency on Date is not being identified by the appropriate dependent module(s), which I presume is the Date Popup module.
