I would like to set default input formats for individual CCK fields.
I have seen many pepole refer to Better Formats for this issue. unfortunately I am still running D5.

How is it possible to solve this issue in D5?

This is not possible for D6, yet, either. See #350696: Per field format settings with full BF options via CCK widget.

And for D5 see #396038: Developer wanted for D5 backport.
